2 tbsp olive oil
1lb Gluten Free Rice Pasta Fettucini style
1 whole yellow onion sliced thin
1/2c-1c of organic frozen spinach
1/2 jar of your favorite organic fresh marinara, or, one can of diced tomatoes
Salt, pepper and garlic, to taste
Boil pasta and rinse with cold water, set aside. Saute onion in olive oil for about 5 minutes, then add spinach and cook until soft. Add sauce and simmer for about 7-10 minutes. Add pasta, turn down the heat and continuously stir until warm enough to serve.
Top with some green beans, pepper, and maybe a pinch of sea salt. Delicious!
